Makes 4 quarts, 16 half cup servings Apples and pears should be fresh, peeled and cubed. The rest of the fruit – strawberries, peaches, and cherries – can be bought frozen, which saves time and results in a lovely product. If you want to use fresh instead of frozen, you will need about a pound of each of the three, after peeling and pitting. Click here to print. Serves 4 Use any sweet flavored tea to make the couscous. Berry tea will turn the couscous a pretty pink, but you can also use vanilla, chai, licorice, or any other fruit tea. Ingredients 1 C Israeli couscous 1½ C very strong tea 2 TBSP sugar or agave 1 C mixed berries or other fruit, diced ¼ C sliced or slivered almonds, toasted in a dry pan until fragrant Honey, maple syrup, or agave for drizzling Directions
